Place one lemon wedge, one mint leaf, Himalayan pink salt, and the mango juice (or pulp) in a pint glass or cocktail shaker. Muddle until the mint is fragrant and the lemon releases its juices. Pour over ice in a Hurricane glass and top with Mango sparkling seltzer. Garnish with a lemon wedge and a mint leaf.
You can swap out lemons for limes or oranges here, and call us crazy but we like to add extra lime and salt the rim of the glass!
